Cassava root is a starchy root vegetable and rich in minerals and fiber. It was discovered by the Vietnamese fighters during the 1954-1975 war as it was a new primary source of food to survive during the battles. As the war ended, cassava trees enjoyed peaceful conditions to grow up in many places. Although the Vietnam War has ended 45 years, the Vietnamese, in the Cu Chi district, northwestern of Ho Chi Minh City, southern Vietnam, has still favored cassava roots, turning them from a lacking food in wartime to a popular snack and special dishes in restaurants also it is profitable for farmers.
